In Naples they were once called Manfredi. Later they were dedicated to Princess Mafalda of Savoy and renamed Reginette. Now called Mafaldine, they can be seasoned with various meat sauces, for example, in Neapolitan cuisine they are seasoned with ricotta cheese mixed with Neapolitan ragù.
