The artisanal processing of dark chocolate-covered gianduja crispies is a process that requires skill and attention to detail. It starts by selecting the best hazelnuts, which are roasted and ground to a smooth and fragrant paste, the basis of gianduia. Next, the gianduja paste is mixed with sugar and cocoa to create a homogenous mixture.
Once ready, the croccantini are dipped in a fine coating of dark chocolate, made from high-quality cocoa beans, which gives them an intense flavour and a perfect contrast to the sweetness of the gianduia.

Gianduia is a chocolatey delicacy that has curious and historical origins linked to the city of Turin, Italy. This delicacy was born in the Napoleonic period, around 1806 to be precise, during the continental blockade imposed by Napoleon Bonaparte. Due to this blockade, which aimed to economically isolate the United Kingdom, it became difficult to obtain cocoa in continental Europe.
In order to cope with the cocoa shortage, Turin chocolatiers came up with the idea of replacing some of the cocoa with an abundant local product: hazelnuts from the Langhe. This mix of cocoa and hazelnut paste not only solved the shortage problem, but gave birth to a new and irresistible product: gianduia. The name 'gianduia' derives from Gianduja, a traditional Piedmontese carnival mask representing a cheerful, good-food-loving peasant, a symbol of the region.
Thanks to this ingenious invention, gianduia has become one of the symbols of the Italian confectionery tradition, appreciated worldwide for its unique, enveloping taste.
