The Story of an Italian High Quality Product

The millenary history of Balsamic Vinegar of Modena PGI is linked to the city of Romagna since the 11th century, with the production of vinegar by boiling grape must, which began in ancient Rome.
Henry III, Emperor of the Holy Roman Empire, received a gift of "the most perfect vinegar" from Boniface, Marquis of Tuscany: an episode documented by the abbot and historian Donizone, biographer of Countess Matilda of Canossa.

In the 13th century, the art of vinegar production was cultivated at the Estense court in Modena. In 1747, the adjective "balsamic" appears for the first time in the cellar records of the Dukes of Este, corresponding to today's Aceto Balsamico di Modena and Aceto Balsamico Tradizionale di Modena DOP.
From a regulatory point of view, in 1933 the Ministry of Agriculture recognised the "age-old and characteristic production of balsamic vinegar of Modena". In 1965, a specification was published on the "characteristics of the composition and method of production of Balsamic Vinegar of Modena". In 1994, the producers worked to improve the product specification and to protect the correct name of Balsamic Vinegar of Modena.

The history of this distinctive and exclusive product has reached another important milestone, becoming a representative of Italian cuisine throughout the world. In fact, in 2009, after a long process, the European Commission recognised the name Balsamic Vinegar of Modena and included it in the register of PGI products. At the Acetaia of the Acetomodena Agricultural Company it is possible to go on interesting tours. Along the tasting and artistic itinerary, guests will have the opportunity to discover the peculiarities of this fine vinegar.
