The history of carob in Sicily is deeply intertwined with the island's culture and economy. Native to the Middle East, this plant was introduced to Sicily by the Arabs around the 8th-9th century AD, a period when the island was under their rule. The carob quickly adapted to Sicily's Mediterranean climate, finding an ideal environment for its growth in the coastal and hilly areas of the island.

Carob, scientifically known as Ceratonia siliqua, is an evergreen tree that can grow up to 10 metres high and is particularly resistant to drought, which is why it has spread widely throughout the island. Its deep roots allow it to survive in arid conditions, making it an ideal crop for the Sicilian landscape.

The plant produces an edible fruit, the carob pod, which contains seeds inside that are extremely uniform in weight. This characteristic of the seeds gave rise to the term 'carat,' a unit of measurement for precious stones, which derives from the Greek 'keration,' the name given to the carob seed.
