Unlike most chocolates, Modica Chocolate is processed at low temperatures, typically below 40°C. This process maintains the organoleptic properties of the cocoa and sugar, giving the chocolate a unique, grainy texture.
The sugar is neither dissolved nor completely amalgamated with the cocoa. This gives the chocolate a characteristic grainy texture and a distinctive taste, where the sweetness of the sugar is felt first, followed by the intensity of the cocoa. 70% Modica Chocolate is known to be made with only two ingredients: cocoa paste and sugar.
