Modica Chocolate PGI is special because it's made using a cold process, which keeps the sugar crystals intact, giving it a grainy texture. This chocolate has its roots in an Aztec recipe brought to Sicily by the Spanish in the 16th century. Unlike regular chocolate, it isn't conched, which means it doesn't go through the refining process that makes chocolate smooth and homogeneous. It's also worth noting that in 1753, aphrodisiac versions were made with exotic ingredients like ambergris (crystallised whale vomit) and white musk (musk deer gland). Modern production is overseen by the Modica Chocolate Protection Consortium, ensuring the quality and authenticity of this prized Sicilian product.
