Why is organic extra virgin olive oil so important?

Organic olive oil is the most famous condiment of the Mediterranean diet, we find it in almost every dish we eat: starters, main courses, side dishes, from the lightest to the most substantial dishes; in 99% of cases at least "a drizzle of oil" is always present.

There are several studies that attest to the nutritional qualities of this condiment, which has been "chosen" as the best of the widely consumed edible fats, because it is the only oil that is obtained exclusively from pressed olives, without the addition of chemicals or other industrial elements, as is the case with other oils or vegetable fats.

It is precisely because of this process that 5 kg of olives are needed to produce just 1 litre of extra virgin oil. The product obtained is therefore equivalent to 20% of the weight of the raw material, with some variations depending on the size of the fruit, the time of harvest and the season.

Due to its frequent use, the flavour of olive oil can sometimes be underestimated. Here are a few simple recipes to get the most out of our organic olive oil:

  • Wholemeal bread and oil: ideal for a light snack or dinner, a slice of toasted bread, a drizzle of oil and a pinch of salt, to which you can add a few capers to enhance the flavour or a few cherry tomatoes in oil to increase its beneficial properties.
  • Quinoa salad, cherry tomatoes, basil and oil: a gluten-free dish rich in protein, carbohydrates and fibre, excellent for a light lunch or dinner, this combination enhances and intensifies the flavours of the ingredients in the recipe.
  • Pasta salad with turmeric and extra virgin olive oil: an excellent first course for the cells, turmeric combined with oil becomes an agglomerate of antioxidant substances.
