The wildest variety there is, with its intense tomato fruitiness and almost non-existent bitterness, makes even palates less accustomed to the strong taste of good oil fall in love with it. It is an oil with an intense, persistent but not aggressive flavour, characteristics that make it extremely versatile.

Organic olive oil is the most famous condiment of the Mediterranean diet, we find it in almost every dish we eat: starters, main courses, side dishes, from the lightest to the most substantial dishes; in 99% of cases at least "a drizzle of oil" is always present.
There are several studies that attest to the nutritional qualities of this condiment, which has been "chosen" as the best of the widely consumed edible fats, because it is the only oil that is obtained exclusively from pressed olives, without the addition of chemicals or other industrial elements, as is the case with other oils or vegetable fats.
It is precisely because of this process that 5 kg of olives are needed to produce just 1 litre of extra virgin oil. The product obtained is therefore equivalent to 20% of the weight of the raw material, with some variations depending on the size of the fruit, the time of harvest and the season.
