Umami is a young company located between the Langhe and Roero regions, specialising in the production of black garlic and black shallots using traditional methods and the best Italian raw materials.

In addition to production, the company is also involved in the natural processing of these precious vegetables, discovering new flavours and nuances that can enhance any dish.

Italian Black Garlic

Umami Black Garlic is a gourmet product made from Polesano D.O.P. white garlic, which undergoes a long maturing process for about a month at a controlled temperature and humidity.

As it matures, white garlic loses its strong, pungent flavour and acquires a soft texture, a liquorice aftertaste and an umami flavour reminiscent of balsamic vinegar or soy sauce. For these reasons, it can be used to enhance the flavour of meat, fish, cheese and vegetables.

This particular product is also easier to digest and avoids the unpleasant garlic taste in the mouth. It is also rich in beneficial properties for the body: it has a lower allicin content and a higher concentration of antioxidants than white garlic. Black garlic is considered a superfood that is beneficial to the body's health due to its antioxidant and antibacterial properties.
