The liquorice tradition in Crotone began in 1679 with the active participation of the local nobility. They acted as a link between the producers of the Sila villages and the Neapolitan merchants. The liquorice was packed in crates or barrels decorated with laurel leaves to ensure that the roots were well prepared and separated.
The roots were collected in the autumn and winter by teams of workers from the Sila villages, who found the bushy, clayey soils of the Crotone area particularly suitable, thanks to their high glycyrrhizin content.
The trade continued throughout the 18th century, with the aristocracy investing large sums of money to transform production from artisanal to industrial, leading to the creation of "regolizia factories".
After the Second World War, however, the production of liquorice in Calabria, which had previously been between 10,000 and 20,000 tonnes a year, fell into a crisis that reached its climax in the 1990s as a result of foreign competition, forcing many local companies to close down or turn to processors outside the region.
In the 2000s, with the help of the EU's European Agricultural Fund for Rural Development, liquorice production in Calabria was revived, increasing the area under cultivation to around 1,000 hectares and reaching an average regional production of 2,500 tonnes of roots per year.
