Cervia Sweet Salt is a unique product with an atypical sweet taste. This is due to a number of factors: the history of the saltworks, geography and nature. The product is obtained from the northernmost saltworks in Italy and has a very low content of bitter chlorides such as magnesium sulphate, calcium, potassium and magnesium chloride. Today, the decision not to artificially dry and chemically bleach it is a tribute to the precious element that salt represents.

It is washed only with mother water, which gives the highly soluble whole salt the necessary moisture. The colour of Cervia's coarse salt, which ranges from pink to grey, is a testimony to its craftsmanship and quality. This colouring is due to the presence of trace elements in the mother water, such as iodine, zinc, copper, magnesium, iron, calcium and potassium, all of which have beneficial effects on the human organism.

This product makes the preparation of sea bream very easy, as all you have to do is toast the sea bream on a sheet of baking paper, place it on a salt tray and cook it in the oven for about 15 minutes.

The result will be incredible; the bream will be tender on the inside and aromatic on the outside, thanks to the intense flavour of the salt brick. The Cervia salt brick can also be used for other dishes such as fish, meat or baked vegetables; in short, it is impossible not to love it!

The ingredients

This recipe is perfect for 4 people and is easy to prepare:

  • 4 fillets of sea bream
  • 1 brick of Cervia salt
  • 4 cloves of garlic
  • 4 sprigs of dried rosemary
  • Organic extra virgin olive oil of the Coratina variety
  • Lemon (optional)
  • Pepper to taste

How to prepare

  1. Preheat the oven to 200°C.
  2. Heat the salt pan
  3. Prepare the seabream fillets: remove the bones and trimmings and place a clove of garlic and a sprig of rosemary inside each fillet. Season with salt and pepper.
  4. Place each gilthead fillet on the salt tile, pressing lightly so that the salt adheres to the surface of the meat, and drizzle with olive oil.
  5. Bake for 15-20 minutes or until the surface of the salt tile is lightly browned.
  6. Serve hot with a slice of lemon (optional) and your favourite vegetables or side dishes.
