Sapò

Producer of organic extra virgin olive oil

The Saponieri farm was founded in 1980 in the countryside of Cassano delle Murge, a town in the province of Bari.

Agriculture has always been the main activity in Cassano delle Murge, which now boasts a large production of almonds, olives and grapes, which are well suited to the dry and rocky terrain. In recent years the processing of local agricultural products has developed: grapes and olives, processed and bottled, produce an excellent wine and extra virgin olive oil.

Mr Antonio Saponieri's small tomolo cultivated olive trees of the Coratina variety, which represented a moment of leisure, a hobby for the afternoon hours, and the olives and oil produced were intended exclusively for the family's consumption.

The centuries-old olive trees, with their gnarled trunks and deep roots, were able to instil in Mr Antonio a deep passion for his land and his origins, which he was able to pass on to his son Vincenzo.

As is so often the case, sons have a vision, a mission aimed at sustainability, respect for the land and its life cycles.

Vincenzo has transformed his father's farm, increasing production to 15 hectares, using organic and natural methods, avoiding the use of herbicides, pesticides and other substances harmful to man and the environment; he began by producing the monocultivar Coratina, which had always been mistreated and relegated to the role of blending oil because of its bitter and spicy taste, and has succeeded year after year in obtaining a pure extra virgin Coratina oil that fully expresses the typical and exclusive flavours of the Murgia carsica.
