Tips and curiosities of the tomolo

This variety has been cultivated in Villa S. Croce for over 70 years, in the past together with maize, in small plots known as "lenze 'e terra". The beans are harvested and selected by hand. This type of bean is medium-sized, irregular in shape, white in colour, with a thin skin that is easy to digest. It has been included in the "Field for the conservation and multiplication of the vegetable biodiversity of the Alto Casertano", managed by the Department of Agriculture of the University of Naples Federico II, and has recently been the subject of two degree theses that have highlighted its extraordinary virtues, its richness in calcium, iron, magnesium and zinc, and therefore its high nutritional value.
